A weeknight soup with red lentils, cumin, lemon, and fresh herbs.

A bright, lemony lentil soup finished with herbs.

Method

Saute the base. Cook onions and garlic until soft, then add spices.

Simmer. Add lentils and stock and cook until the lentils have broken down.

Finish. Blend lightly if desired and brighten with lemon and herbs.
